You can prepare many of your favourite meals with vegan ingredients that may even have you preparing them way after Veganuary ends.
Here are some simple, delicious vegan recipes for you to try with a special twist to enhance the flavour—using BBQ sauce as a marinade. Whip up these delectable dishes for Veganuary this year for a great start to the year.
1. Vegan katsu curry
For the curry, peel and chop up onions, carrots, and ginger and fry them in some sesame oil for about 5 minutes. At this stage, you can choose to add a flavourful sauce of your choice and coconut milk and let it simmer.
Cut up some aubergines into slices that are 1 cm thick and generously coat them in a marinade of a smokey BBQ sauce and let it sit for about 10 minutes. In one bowl, whisk together flour and oat milk and in another prepare the panko breadcrumbs.
Once the aubergines are well marinated, dip them in the flour and milk mixture before coating them with the breadcrumbs.
You can either choose to bake the aubergines for 15-20 minutes at 200°C or fry them in sesame oil till golden brown. You can now assemble and serve the katsu bowl by topping steamed rice with the fried aubergines and the vegetable curry you prepared earlier.
2. Tempeh burger
Cut the tempeh into chunks and process it in a food processor. Then add in black beans, sweetcorn, coriander, mushrooms, lime juice, and flaxseeds and give it another round in the processor.
Season the mixture with a spicy rub and begin to form it into equal-sized patties. Make a marinade with a vegan BBQ sauce and generously coat the patties before setting them in the fridge overnight for them to soak up the flavour.
When you’re ready, fry the patties on a hot grill and make sure to flip them halfway through, cooking for 5-7 minutes on each side.
Once cooked, assemble your burger buns with the patties and toppings of your choice.
3. Mushroom bourguignon
Chop up onions, garlic, mushrooms, and chestnuts. In a separate bowl, generously pour some vegan BBQ sauce and add the chopped vegetables and make sure to coat them well.
Once the vegetables are well marinated, sauté them for a couple of minutes while continuously stirring them.
Add in some vegetable stock and let it simmer till the gravy thickens.
Once cooked, make sure to serve it hot with mashed potatoes and steamed vegetables.
4. Vegan ‘duck’ pancakes
Break apart chunks of canned jackfruit until it’s in threads. Marinate the jackfruit with a vegan, smokey BBQ sauce and a spicy seasoning to bring out the flavours.
Mix well and let the jackfruit soak up all the flavours. Proceed to lightly fry the jackfruit for about 10 minutes and let it cool once cooked.
Once you’re ready to eat, spread the jackfruit on a lined baking tray and bake for about 20 minutes at 200°C to crisp it up.
You can then top the pancakes with the jackfruit mixture, sprinkle them with sesame seeds and fresh coriander, and roll them up. Enjoy with a spicy sauce.
