Yes, there is a difference between rubs and seasonings. Rubs are generally coarser and can be applied much more liberally, whereas seasonings are finer and need to be used carefully to avoid over-seasoning.

Ideally, the oil should be applied to the meat first so that the dry rubs have a much better chance of sticking to the meat and not falling off. Once this is done, you can let it rest for about 30 minutes before you start grilling.
