The E-jen fermentation and storage container is widely loved in Korea as the best modern container for fermenting and storing kimchi and jang (Korean fermented sauces). It is also great for making sauerkraut, pickles and fermented beverages as well as other foods requiring airtight storage, such as fresh vegetables, coffee beans, bread, seaweed, cookies, cereals, grains and even dry pet foods. The container is made from high quality durable polypropylene plastic. Like Onggi, the container has very fine pores which allow minimal air flow. This keeps the food fresh while preventing aerobic bacteria from thriving. The simple yet brilliant design of the inner vacuum lid allows easy adjustment of the lid position according to the level of food. So regardless of the amount of food, the container induces an anaerobic environment in which the beneficial bacteria (lactic acid producing bacteria) thrive and the crunchy texture and vibrant color are maximized. The carbon dioxide released by lactic acid producing bacteria is absorbed back to the kimchi juice, creating a more refreshing taste. Although the smell of kimchi is the result of healthy bacteria producing lactic acid, it can be quite powerful. The E-jen container’s double lids contain the smell better than most containers, preventing the smell from filling the kitchen or the fridge. The E-jen container is easy to handle and clean. I have been fermenting veggies for about 30 years and can say this is a convenient way to make kimchi. Easy to clean and results within a few days (fermented 9kg of napa cabbage in the garage, 12-15deg C, came out great). I did monitor the inner seal daily and pushed it down to “bleed off” the air that gets trapped under the seal. This isn’t really required since it’s part of the fermentation process, but rather a preference to keep the cabbage in contact with the pepper flakes and juices.

I’m Korean with a non Korean partner, and I recognize that making your own kimchi comes with several nuanced aromas that others might not appreciate as much as I do. I bought this to help contain those smells. First off, I bought the 1.6 gallon container. I’d say it’s comfortably hold 4 Napa cabbage heads inside, which is a lot of kimchi. Secondly, the construction quality is very good. Everything fit very snugly together to make an air tight seal. Third, while fermenting in the fridge, I detected none of the usual garlic odours in the fridge while I let it slow ferment. I cannot speak to if this container produced a better finished kimchi than other containers, but the kimchi came out excellent, and all the other inhabitants in my fridge thank me for buying this container.

Love, love, love it! So easy to use. BPA free. I am currently fermenting sauerkraut in it. I used 2 large cabbage heads and there is plenty of room left. Next time, I will use 5-6 heads of cabbage. Highly recommended. The cabbage stays submerged with no floating pieces. Fantastic.
