This product can be used to keep meat moist and fresh tasting after freezing. Using this product will help ensure the required moisture, texture, and tenderness after cooking. After dissolving the phosphate, you can add any other product to the mixture for flavouring. Suggested usage for brining is 1 cup of Butcher BBQ Phosphate to ?? gallon of water. For injecting, use ?? cup of Butcher BBQ Phosphate to 2 cups of water. 1 cup equals ?? pound. If it doesn’t say ‘BBQ Phosphate’, it may not me made for meat – there is several types of phosphate and not all are created equal. Formulated for all types of competition cooking, Butcher BBQ Phosphate mixes well with any spice or injection for added moisture.     got to say I was very skeptical about using phosphates. Last 10 years I’ve probably done over 100 brisk it’s have tried everything except phosphates in them. Everything from beef stock to strong coffee and I got a say. I’m definitely a believer in the phosphates now. Came out perfect first time. Give you great texture and the brisket even if it’s a bad brisket. Deftly will help you with texture especially if you’ve overcooked the brisket. Will definitely be ordering it again.

    I have used this two ways, to enhance a commercial injection formula, and as the only product in my injection (except a very small amount of salt). I like that it is clear and when used alone it does not alter flavour or colour on more expensive briskets while providing the extra moisture needed when cooking to the necessary temperatures. Have also used various other Butcher injection products and find them all to be great products.

    I mixed up an injection using the recommended ratio of 1/4 cup phosphate to 2 cups liquid. I used 1 cup reduced turkey stock (homemade) and 1 cup unsalted chicken broth (store-bought.) I injected our Thanksgiving turkey after spatchcocking it, and cooked it in a kamado grill. It was noticeably more juicy than the “test turkey” I cooked the preceding week without injecting. I did also dry-brine the Thanksgiving turkey longer, so that may also make a difference. The phosphate does add a bit of saltiness, but not as much as the same amount of salt or MSG. I’d say it would be about a quarter to a third as salty. I plan to use this for injecting poultry and pork in the future (I have Butcher’s brisket injection to use for beef.) As I use the bag of phosphate up, I plan to buy another, as I am very pleased with its performance.

    I tried it on a choice packer brisker with what looked like a pretty lean flat. I used the mix and injected in a grid pattern from the flat side of the brisket and then cooked it to 205. It came out pretty good and I believe it was the difference between a dry flat and a very decent one. The point was very juicy and moist. I’ll try it on a prime next time. Choice this time because the choice was under $2/lb. on sale, lol 😀
