Keep the marination time short

If you’re using acidic marinades, you should try to keep the marination time as short as you can, preferably 2 hours max. Left marinating for too long, your salmon could end up becoming too soft and might even fall apart.

Avoid oiling the grill—oil the fish

Salmon can get a bit sticky when you throw them on the grill. To prevent this from happening, try applying oil to the salmon fillets instead of your grill grates. Also, use an oil with a neutral flavour, like grapeseed oil.

Grill skin side down

Salmon meat is delicate compared to most meats, so grilling your salmon fillets skin side down first can help prevent the salmon flesh from getting scorched. Grill until the skin turns nice and crispy and then flip them over.

Flip just once, that’s it

When you grill your salmon skin side down, you should do this for pretty much 90% of the cooking time so the fish doesn’t start to fall apart. Afterwards, just flip the fillets over just once and let them cook a minute longer.
