What is a 'Brine' or 'Soak'?

A ‘brine’ or 'soak' is a solution of salt in water that has been flavoured with spices, caramel, vinegar, etc.  In a similar way to marinating, the brine is used in a process called 'brining' in which meat or poultry is soaked in the brine prior to cooking to increase the flavouring and moisture content of the meat.  Brining makes cooked meat moister by trapping water molecules inside the meat and holding them during cooking, thus preventing the meat from dehydrating.

Meat is usually soaked in brine for 6-12 hours, but the amount of time needed depends upon the size of the meat and the brine used.  For example, more time is needed to brine a large turkey compared to a small chicken.
